Processing record

Washed for clarity, dried with patience.

The process record follows the coffee from cherry selection through fermentation, washing and an extended period of sun-drying.

  1. 01

    Cherry selection

    Ripe cherry is sorted by hand and density-floated before processing.

  2. 02

    Pulping

    The fruit is pulped, leaving the depulped coffee in its mucilage.

  3. 03

    Fermentation

    Coffee ferments aerobically in a plastic drum for 30 hours with naturally occurring yeast.

  4. 04

    Washing

    After fermentation, the remaining mucilage is washed away.

  5. 05

    Drying

    The coffee is sun-dried for 240 hours (approximately ten days) across the estate’s drying infrastructure.

  6. 06

    Moisture target

    Drying is recorded toward a target moisture content of 12%.

Excelsa at Kuchally

Excelsa, botanically Coffea dewevrei, is a tree-coffee species with limited commercial production. It is adapted to warmer conditions and is generally cultivated at mid elevations.

At Kuchally it grows between 950 and 1,050 metres, within a mixed, shade-influenced landscape receiving approximately 90 inches of rain in a typical year.
